History and Facts:
Before the discovery of America, the Old World was familiar with many types of beans but not with the "common bean." Snap beans are believed to have originated in Central America and were distributed widely over both Americas by the Indians. They were introduced into Eurpope and Asia soon after their discovery and quickly became popular. They were mentioned in Europe about 1542. It has been only in the last 100 years, however, that truly stringless snap beans, as we know them today, were developed.

Dade County is the states fresh snap bean capital, producing nearly 53 percent of Floridas crop in 1996-97.

Florida produces 100 percent of the U.S. - grown fresh snap beans during the months of January, February and March.

Nutritional Value:
Green beans are a good source of dietary fiber and a fair source of Vitamin C and folic acid. Beans are also an important source of potassium and many micronutrients.

Look for plump, crisp beans that are reasonably well-shaped. The beans should have even color and fresh blossom ends. Avoid beans that are wilted or have brown rust spots on the skin. Many people prefer smaller beans which are usually more tender. To store, place beans in a plastic bag and put in the refrigerator.
