History and Facts:
There is historical and botanical evidence that cabbage has been in cultivation for more than 4,000 years. Scrolls from 1000 B.C. were uncovered during the Boxer Rebellion in China that mentioned white cabbage as a cure for baldness in older men. Cabbage was first brought to North America in the 1600's and the first recorded planting was in 1699.
Cabbage is an excellent source of vitamin C, with one wedge providing 82 percent of the recommended daily allowance. It is also ideal roughage, and in most cases improves digestion.
Cabbage should be stored at 32 degrees fahrenheit, with a relative humidity between 98 and 100 percent. Adequate ventilation is a requirement. Cabbage stored at room temperature will wilt and become flabby due to moisture loss. Typical shelf life is 90 to 180 days.
