Potatoes

History and Facts:
Although they are called "Irish", the potato really is not native to Ireland, but to the Americas. It was in the valleys of the Andes Mountains of South America that potatoes were first cultivated and still are. Wild potatoes are found as far north as Colorado. However, the potato, as we know it today, has no resemblance to the wild varieties found in South America.

Nutritional Value:
Potatoes are an excellent source of potassium, and surprisingly provide much of our daily recommendations of vitamin C.

Storage:
Potatoes should be stored in a cool, well ventilated, dark place. Ideal temperature is 38 to 40 degrees fahrenheit with a relative humidity of 90 percent. Artificial light may cause potatoes to turn green and lose quality. Florida's spring potatoes should be stored for only a short period.
