Gator Tail Picadillo
Ingredients

4 tablespoonsolive oil

1 largewhite onion, chopped

6 clovesgarlic, minced

6bay leaves

2 poundsground alligator tail meat

1/2 cupchicken stock

1 14-1/2-ouncecan diced tomatoes, with juice

3/4 cupraisins

3/4 cuppimiento-stuffed green olives, sliced and drained

1/4 cuptomato paste
-
1 1/2 teaspoonsred wine vinegar

1 stickcinnamon
-
1 teaspoonfresh oregano, chopped

1 teaspoonchili powder

1 teaspooncumin
-
1/4 teaspooncayenne pepper

3 cupscooked white rice
Preparation
In large soup pot, heat oil over medium-high heat. Add onion, garlic, and bay leaves; sauté 5 minutes until onions are soft. Add gator meat and sauté until cooked through. Add all remaining ingredients and simmer until picadillo thickens, stirring occasionally. Season to taste with salt and pepper. Discard bay leaves and cinnamon stick. Serve picadillo hot over white rice.
