4 cups Florida orange juice
4 Florida green onions, sliced
6 Florida Key Limes
1/4 cup Florida honey
2 Florida jalapeno pepper, sliced
1/2 cup Florida kumquats, sliced
Pinch Ground ginger
1 Florida red bell pepper, sliced into strips
1 Florida banana, sliced
1 Florida mango
Heat orange juice and onions in skillet. Add juice of lime and honey. Add jalapeno, kumquats, ginger, and bell pepper and cook covered on low heat for 20 minutes. Remove lid and cook 20 minutes more until juice is reduced. Add the banana and mango and cook for 5 minutes.
3 pounds Florida shrimp
spray olive oil
3 tablespoons lemon juice
Peel shrimp. Baste with olive and lemon juice. Grill or sauté shrimp.
Serve shrimp on yellow rice, topped with 2 tablespoons of salsa.
Recipe serves 8-10.
NOTE: Salsa can be prepared in advance and frozen.
