1/4 cup Florida lime juice
3 tablespoons Florida honey
3 cups Florida watermelon, chopped and drained
1 cup Florida cantaloupe, chopped
1 cup cucumber, chopped
1 cup Florida avocado, chopped
1 cup Florida mango, chopped
3/4 cup Florida sweet onion, chopped
2 tablespoons jalapeño peppers, minced and seeded
1/4 cup fresh parsley, minced (leaves only)
1/2 cup fresh cilantro, minced (leaves only)
1 tablespoon Florida orange rind, grated
Combine all ingredients in a large mixing bowl. Chill for 2 hours. Salsa may be served over seafood, in tortillas, or as a dip. Serves 8.
