Italian Tomato Bake
1 med. egg plant peeled and sliced (1/2 inch across)
2 ripe tomatoes sliced -with or without the skins 1 lb of Italian sausage brown (remove meat from casing before browning)
1 large onion sliced
(1/2 inch across)
Italian spice to taste (approximately 1 tsp.)
2 tbs. of olive oil
1 cup of cheese (I use a four cheese combination) |

Lightly spray baking pan (9x9) with Pam or drizzle with olive oil. Layer sliced vegetables beginning with eggplant, tomatoes then onions. Scatter browned sausage over vegetables. Drizzle remaining olive oil and Italian spices. Cover and bake at 350 degrees for thirty minutes. The time will vary according to each persons preference on crispness of vegetables. Add cheese and return to oven until melted. Add a crisp
green salad and hot bread for a fast and easy meal.
