Location and Map
Chautauqua Vineyards is located at the intersection of Interstate 10 and U. S. 331 in Defuniak Springs, Florida.

Vineyards and Acreage
The vineyards were planted in 1979. The grapes grown are hybrids of the native grapes and have been selected for wine production. The vineyard is irrigated and fertilized carefully for optimum fruit quality.

The harvest season occurs in late August and early September. The close proximity of the vineyards to the winery allows for rapid crushing and processing following picking. The winery utilizes a mechanical harvester which allows the fruit to be picked in the cool morning hours quickly and efficiently. The time between picking and delivery to the winery is usually one to three hours. A minimum of 200 tons are crushed each year at the winery.

Facilities
The winery was built in 1989. The finest, state of the art winemaking equipment, such as a Wilmes Bladder Press, imported from Germany, are used in the making of the fine wines. The press gently extracts the juice from the fruit without excessive pressures which would macerate the skins.

Once the red grapes are crushed, or in the case of white grapes, crushed, pressed, and cold settled, the fermentation is begun using select cultured wine yeast. Following fermentation, the wines are clarified and aged. Bottling usually occurs in the summer of the year following harvest.

History
Chautauqua Vineyards' name was chosen because the community of DeFuniak Springs was the Winter Assembly site for the Chautauqua Assembly from Chautauqua County New York from 1885 until 1928.
Chautauqua sign

The Native American word "chautauqua" means "meeting place." The Assembly Hall of Brotherhood and many of the turn of the century homes still stand, gracing the shore of a perfectly round lake in the center of the city. The dome on the wine label depicts the dome which caps the Hall of Brotherhood.

muscadines
The grapes used to make Chautauqua wines are from a family of grapes native to the southeast United States, vitis Rotundifolia, or more commonly, muscadines. The first wine made in the "New World" by Europeans was made in Florida by French Huguenots in 1562 using wild grapes, the predecessors of improved wine grapes.
Today, advances in viticulture and enology make the distinctive wines from muscadine grapes comparable in quality to wines made from any wine grape. The wines from Chautauqua Vineyards are a new generation of wines from this old and historically significant family of grapes.
