Sweet Bell Pepper Coulis |

2 tbsp. Olive oil 1/4 cup Florida red onion, diced small 2 cups Florida sweet peppersdiced medium (Red or yellow) 1/2 tbsp. Florida garlic, minced |
2 cups dry white wine 1 tbsp. fresh basil, chopped 2 cups chicken or vegetable stock 1 tbsp. fresh parsley, chopped salt & pepper to taste |
Method: Heat olive oil over medium-high heat in a large sauce pan; saute onions and peppers, for approximately two minutes; add garlic and stir for one minute; add white wine, simmer, and reduce liquid by half, add stock and simmer until peppers become very tender. Remove from heat, add fresh herbs and puree in a food processor or blender. Adjust seasoning with salt and pepper and strain if desired. Serve with fresh Florida seafood, chicken, or Florida vegetables. Yield: Approximately 2 cups or 6-8 servings |
