Cheesy Island Fish fresh finfish

2 pounds fillets, cut into serving-size pieces
1 teaspoon salt
1 cup Thousand Island salad dressing
1 1/2 cups crushed snack cheese crackers
2 tablespoons oil

Step 1: Sprinkle fillets with salt. Dip fillets in salad dressing and roll in cracker crumbs. Place on a well-oiled baking sheet.

Step 2: Drizzle fillets with oil and sprinkle lightly with paprika.

Step 3: Bake at 500 degrees for 10 minutes per inch of thickness or until fish flakes easily and is no longer translucent in the center. Yield: 6 servings
