Rock Shrimp Dreams.



pound cooked, peeled and deveined Florida rock shrimp cup chopped ripe olives
6 ounces soft cream cheese 1 tablespoon Florida lime juice
cup chopped Florida pecans 6 slices, white bread
cup drained, crushed pineapple 6 slices, wheat bread
      butter

Chop rock shrimp. Combine all ingredients except bread and butter; mix well. Lightly butter bread. Spread equal amounts of shrimp mixture on 6 slices of white bread; cover with remaining slices of wheat bread and cut each sandwich into four pieces diagonally. Yield: 4 servings
