Roasted Clams with Vinegar Sauce..roasted clams

2-3 pounds Florida Hard Clams

Place washed clams in a single layer on a roasting pan or a baking sheet with sides. Roast in a 350 degree oven for about 10-12 minutes, depending on size of clams. When clams open, remove them from oven and serve with cocktail sauce, drawn butter or the following vinegar dipping sauce.

Vinegar Dipping Sauce

cup cider vinegar 1 teaspoon salt
1 teaspoon minced Florida garlic 1 teaspoon fresh cracked black pepper
cup Florida green onions, finely chopped cup Florida tomatoes, finely chopped

Mix all ingredients together. Serve with roasted clams.
Yield: 2 to 4 servings.
