Crunchy Baked Fish Fingers

Crunchy Baked Fish Fingers

What You Need

  • 2 eggs
  • 3/4 cup milk
  • 1 cup flour
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 3 cups corn flakes cereal, crushed fine
  • 1 pound Florida fish (grouper, snapper, or mahi-mahi), cut into long strips 1-inch thick

Let's Cook!

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine eggs, milk, flour, salt, and pepper; mix well and set aside.
  3. Crush corn flakes by putting in baggies or zip lock type bags and squishing with your hands. Put into a large bowl
  4. Dip fish strips into batter and then roll into crushed corn flakes.
  5. Place on a cookie sheet in a single layer and bake for 15-17 minutes until cooked through. Makes 4 servings.

What You Need

  • 2 pounds skinless Florida fish fillets
  • 2 cups crushed cheese crackers
  • 1/2 cup French dressing
  • 2 tablespoons vegetable oil
  • paprika
  • Florida lime wedges

Let's Cook!

  1. Turn oven to 500 degrees F to preheat.
  2. Place French dressing and crushed cheese crackers in two separate shallow dishes.
  3. Grease a baking pan.
  4. Dip fillets in French dressing and coat with crushed cheese crackers. Place in greased pan.
  5. Drizzle oil over fish and sprinkle with paprika.
  6. Bake at 500 degrees F for 10 to 12 minutes or until fish flakes easily with a fork.
  7. Place lime wedges on the plate with the fish. Makes 6 servings.

Shrimp Kabobs

Shrimp Kabobs

What You Need

  • 1 1/2 pounds Florida shrimp, peeled and deveined
  • 1/4 cup lemon juice
  • 1/4 cup chopped parsley
  • 1/4 cup soy sauce
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • Choose two or three of the following: pineapple chunks (fresh or canned); tomato wedges or cherry or grape tomatoes; pearl onions or 2 onions, quartered; 2 green peppers cut into 1-inch squares; fresh mushroom caps or canned button mushrooms, drained.

Let's Cook!

  1. Using long metal or wooden skewers, alternate shrimp with vegetables or fruit of your choice.
  2. Make a sauce by mixing remaining ingredients in a bowl.
  3. Grease grill or broiler pan rack.
  4. Place kabobs on well-greased grill or broiler pan and brush with sauce.
  5. Broil or grill for 5 minutes.
  6. Turn kabobs and brush again with sauce.
  7. Broil or grill 3 to 5 minutes longer. Makes 6 servings.
