Florida Orange Meringue Pie

Ingredients
3/4 cup sugar
5 tablespoons cornstarch
1/2 teaspoon salt
1 cup cream substitute (coffee creamer) plus 1 cup water
3 egg yolks, beaten
1/2 cup fresh orange juice
2 tablespoons butter
1   9-inch pie shell, baked
 
Preparation
Combine sugar, cornstarch, salt. Add milk gradually and cook over low, heat until thick and clear, about 6 minutes stirring constantly. Add beaten egg yolks and cook over low heat 6 minutes longer continuing to stir. Remove from heat; add orange juice and butter. Cool. Pour into pastry shell. Top with meringue; bake at 400 degrees F until golden brown.

6 to 8 servings

 
Meringue
3 egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar
 

Beat egg whites and cream of tartar until whites stand in soft peaks. Gradually add sugar, beating until firm peaks are formed, spread over filling.
