Florida Fruit Recipe
Lemon Curd

Ingredients |

large eggs |
1/2 cup |
butter |
1 cup |
sugar |
2 tablespoons |
lemon peel, grated (4-6 lemons) |
1/2 cup |
fresh lemon juice |

Preparation |
In a small mixing bowl, beat eggs at high speed until thick and lemon-colored; set aside. In a saucepan, melt butter over medium heat. Remove from heat and add sugar, lemon peel and juice; blend well. Stir in eggs. Cook and stir over medium heat just until mixture comes to a boil and is smooth and thickened. Remove from heat and pour into jar(s) or a freezer container. Cover and chill thoroughly, several hours or overnight.
