Florida Fruit Recipe

Strawberry Pie with Chocolate Crust

8 ounces chocolate wafer cookies, finely ground
2 1/2 tablespoons sugar
pinch sea salt
6 tablespoons unsalted butter, melted
3 cups fresh strawberries, trimmed and rinsed
2-plus cups whipping cream
  fresh mint leaves
Preheat oven to 350 degrees F. In a 9-inch glass pie dish, mix ground cookies, sugar and salt. Add butter and mix until evenly moistened. Press evenly over the bottom and up the side of the pie dish to form a crust. Bake for 8 minutes. Remove from the oven, and using the bottom of a glass, immediately press the crumbs again to compact the crust. Let cool completely. In a large mixing bowl, whip the cream and fold in the strawberries. Fill the cooled pie crust with the strawberry mixture, cover and refrigerate. Garnish with mint before serving.
