Florida Meat Recipe

Ostrich Skewers

1 tablespoon vegetable oil
2/3 cup sugar
1/3 cup soy sauce
1 small onion
1 pound ostrich or emu, fajita strips or slices from round
Combine first 4 ingredients in blender or food processor and puree. Pour marinade ingredients over meat and marinate 2 hours or overnight. Remove meat and reserve marinade; thread strips of meat on skewers. Grill over medium heat or broil, basting occasionally with reserved marinade.

8-12 servings as an appetizer
