Florida Seafood Recipe

Florida Seafood Gumbo

1/4 cup butter
1 1/2 cup onion, chopped
1 cup bell pepper, chopped
1 cup celery, chopped
1/2 cup all-purpose flour
3 28-ounce cans crushed tomatoes, undrained
1 pint oysters, undrained
1 pound grouper fillets, cut into 3-inch pieces
1 pound lump blue crab meat
1 pound shrimp, peeled and deveined
1 pound bay scallops
2 cloves garlic cloves, minced
1 teaspoon crushed red pepper
1 teaspoon freshly ground black pepper
1 teaspoon salt
1 teaspoon fresh oregano, chopped
1 teaspoon fresh basil, chopped
1 teaspoon fresh thyme, chopped
1 tablespoon Cajun seasoning
1 pound fresh or frozen okra, sliced
1/2 cup green onions, chopped
6 cups cooked rice
Melt butter in large soup pot. Add onion, bell pepper and celery; sauté until tender. Add flour and blend well. Add tomatoes and all seasonings; bring to a boil and simmer on low heat for 30 minutes. Add all seafood and simmer an additional 45 minutes. Add okra and simmer for another 15 minutes. Sprinkle with green onions and serve over rice.
