Florida Seafood Recipe

Cooked Clams

2 dozen clams in shell, scrubbed well
1/2 cup butter
1/4 cup lemon juice
Arrange the clams around the outer rim of a 10- to 12-inch shallow round microwave- safe dish. Pour lemon juice in dish and place butter in the center of the dish. Cover, leaving a vent, and cook on high for 2 1/2 to 5 minutes, or until all the shells have opened. Rotate the dish half-way through cooking time. Serve clams with the broth from cooking.

4 servings

For most microwave ovens it will be necessary to cook clams in two batches of one dozen.

Look for "Fresh from Florida" ingredients at your grocery store.
