Ingredients |

fish fillets, cut into 1-inch cubes |

large tomatoes, peeled and cut into wedges |

onions, sliced |
1 teaspoon |
salt |
1 cup |
carrots, julienned |
1 teaspoon |
basil or dill |

large green bell pepper, cut into 1/4-inch strips |
1/4 teaspoon |
pepper |
2 tablespoons |
vegetable oil |

Preparation |
|
Saute onions, carrots and green pepper in oil over medium heat for 5 minutes. Add fish and remaining ingredients; stir well. Cover, reduce heat, and simmer for 10 minutes or until fish flakes easily and is no longer translucent in the center.
