Florida Seafood Recipe

Ybor City Fillet

Ingredients  
1 1/2 pounds tilefish fillets
2 teaspoons garlic, minced
1 1/2 cups yellow bell pepper, diced
1 teaspoon black pepper
1 1/2 cups green bell pepper, diced
1 teaspoon salt
2 cups cooked yellow rice
1 teaspoon ground cumin
1 tablespoon paprika
 
Preparation  

Cut fish into approximately 2x2-inch pieces. Mix bell peppers with cooked rice; set aside and keep warm. In mixing bowl combine paprika, garlic, pepper, salt, cumin and fish. Mix ingredients until fish is coated well. Place fish on a lightly oiled broiler pan and broil 4 to 6 inches from heat for 5 to 6 minutes on each side. Fish is done when it flakes easily when tested with a fork and is opaque in the center. Serve immediately with yellow rice.
