Florida Seafood Recipe
Pompano with Tomatoes

skinless, pompano fillets |
2 tablespoons |
grated onion |
1 teaspoon |
salt |
1/8 teaspoon |
pepper |

large tomatoes, cut into small pieces |
1/4 cup |
butter |
1 cup |
shredded Swiss cheese |

Preparation |
Place fillets in a single layer in a microwave-safe dish with thicker fillets to the outside of dish. Sprinkle fillets with onion, salt and pepper. Top fillets with tomatoes. Dot with butter and sprinkle with cheese. Cook uncovered in microwave on high for 8 to 10 minutes or until fish flakes easily when tested with a fork; rotate dish once during cooking.
