Ingredients |

alligator meat |
2 tablespoons |
olive oil |
1 cup |
chopped onions |
1 teaspoon |
chopped garlic |
1 28-ounce can |
diced tomatoes |
6 ounces |
tomato paste |
1/4 cup |
chopped fresh basil |
2 teaspoons |
paprika |
1/4 teaspoon |
black pepper |
1 cup |
dry white wine |
1/4 cup |
chopped fresh arugula |

Preparation |
Cut meat into 1 inch pieces. Heat oil in large sauce pan over medium-high heat and sauté meat for 4 to 5 minutes. Add onions and garlic; cook until onions are tender. Add tomatoes, tomato paste, basil, paprika and pepper. Cover and bring to boil; reduce heat and simmer for 10 minutes, stirring occasionally. Add wine, cover and simmer on medium heat for 30 minutes. Add arugula, mix thoroughly and serve.
