7 slices bacon
2 medium onions, diced
1 large green bell pepper, diced
3 jalapeno peppers, seeded and minced
4 garlic cloves, minced
7 cups tomatoes, diced
1/4 cup cocktail sauce
1/2 teaspoon salt
1/8 teaspoon pepper
4 cups grits
2 pounds peeled, deveined medium shrimp

Cook bacon in a large skillet until crisp. Remove bacon and drain on paper towels; set aside. Reserve 3 tablespoons drippings in skillet. Sauté onion in hot drippings for 5 minutes. Cook grits according to package instructions; set aside. Stir shrimp into tomato mixture; cook 5 minutes. Serve shrimp over hot cooked grits and top with crumbled bacon.
