Florida Seafood Recipe

Paella with Shrimp

Ingredients  
1 pound medium Florida Shrimp
10 ounce package yellow rice mix
2 tablespoons tarragon vinegar
4 tablespoons olive oil
1/2 teaspoon curry
1/4 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon white pepper
4 cups chicken breasts, cooked and chopped
2 tomatoes, chopped
1/2 cup green onion, minced
2/3 cup celery, thinly sliced
1 tablespoon salt
1 cup frozen peas
 
Preparation

Cook shrimp in boiling water just until shrimp are pink in color. Rinse shrimp in cold water, peel, devein and chill. Cook rice according to package directions. Combine vinegar, oil, curry, mustard, 1/4 teaspoon salt and pepper. Mix with cooked rice and cool to room temperature. Add chicken, shrimp, tomatoes, onion, celery, 1 tablespoon salt and peas to rice. Toss and chill before serving.
