Florida Seafood Recipe
Shrimp and Spinach Pita Pizza

red onion, thinly sliced |

fresh spinach, chopped |

oregano, dried |
1 cup (4 ounces) |
part-skim mozzarella shredded cheese |

large shrimp, cooked and peeled |
Preparation
Heat oil in small skillet over medium heat. Add onion and cook for one minute. Add spinach and oregano; cook one minute or until spinach is wilted. Sprinkle 1/4 cup cheese on each piece of pita bread. Top with spinach mixture, tomatoes, shrimp and remaining cheese. Place pitas on baking sheet; bake at 400 degrees F for 10 minutes or until cheese is melted.
