Florida Seafood Recipe

Smoked Mullet, Cucumber and Orange Salad

1 orange
1/4 cup balsamic vinegar
1/2 cup vegetable oil
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
10 ounces smoked mullet cut into small cubes (about 2 cups)
1 cucumber, peeled, seeded and diced (1-1/2 cups)
1/2 cup coarsely chopped fresh parsley leaves
6 cups mixed spring lettuce
Grate the dark outer orange zest from the orange into a small bowl. Add the vinegar, oil, mustard, salt and pepper and whisk together. Cut the remaining rind from the orange, cut the orange into sections and discard the membrane. In a medium bowl, toss together the orange sections, Mullet, cucumber, parsley and half the dressing. Cover and chill the salad until ready to serve. Serve the salad on a bed of lettuce and drizzle with the remaining dressing.

2 to 4 servings
