Florida Seafood Recipe

Shrimp and Spinach Pasta

1  16-ounce package spinach pasta nests
3 pounds shrimp, peeled and deveined
1 cup butter
2  10 3/4-ounce cans cream of mushroom soup
2 cups mayonnaise
2 cups sour cream
2 tablespoons chives, chopped
1 teaspoon Dijon mustard
8 tablespoons dry sherry
1 cup shredded sharp Cheddar cheese
Preheat oven to 350 degrees F. Cook pasta according to package directions. Line two 13x9-inch inch baking dishes with pasta. Sauté shrimp in butter for approximately 4 minutes. Cover pasta with shrimp. Combine soup, mayonnaise, sour cream, chives, mustard and sherry. Pour sauce over shrimp, sprinkle with cheese and bake for 30 minutes. Recipe may be halved.
