Mexican Snapper Sauté(Photo Below)

Ingredients |

onion, sliced medium thick |
6 cloves |
garlic, pressed |
1-2 teaspoons |
minced jalapeño pepper, seed removed or to taste |
2 cups |
zucchini, diced in 1/2-inch cubes |
1 pound |
snapper filet, cut into 1-inch pieces |

fresh tomatoes, diced |
3 tablespoons |
lemon or lime juice |
2 tablespoons |
fresh cilantro, chopped |
1 tablespoon |
fresh oregano, chopped |

ripe and firm avocado, diced |

salt and pepper to taste |

Preparation
Sautée onion in a sauté pan over medium-high heat for a couple of minutes until caramelized. Add garlic, zucchini, and peppers and continue to sautée for another couple of minutes. Add snapper and sautée for another couple of minutes, stir constantly. Add the rest of the ingredients (except the avocado) and cook for another couple of minutes. Add avocado, salt and pepper to taste. Serve warm over rice.
