Florida Seafood Recipe

Mexican Snapper Sauté

Ingredients  
1 onion, sliced medium thick
6 cloves garlic, pressed
1-2 teaspoons minced jalapeño pepper, seed removed or to taste
2 cups zucchini, diced in 1/2-inch cubes
1 pound snapper filet, cut into 1-inch pieces
3 fresh tomatoes, diced
3 tablespoons lemon or lime juice
2 tablespoons fresh cilantro, chopped
1 tablespoon fresh oregano, chopped
1 ripe and firm avocado, diced
  salt and pepper to taste
 

Preparation
Sautée onion in a sauté pan over medium-high heat for a couple of minutes until caramelized. Add garlic, zucchini, and peppers and continue to sautée for another couple of minutes. Add snapper and sautée for another couple of minutes, stir constantly. Add the rest of the ingredients (except the avocado) and cook for another couple of minutes. Add avocado, salt and pepper to taste. Serve warm over rice.
