Florida Seafood Recipe
Poached Mullet

Ingredients |

1/2 cup |
leeks, thinly sliced |
1 |
fresh lemon, thinly sliced |
1 teaspoon |
capers |
5 whole |
dried bay leaves |
1/2 cup |
white wine |
|
salt to taste |
|
pepper to taste |
4 |
fresh mullet filets |
|
fresh parsley for garnish, if desired |

Preparation
Fill large frying pan 3/4 full with water and add leek, lemon, capers and bay leaves. Simmer for 10 minutes then add the wine. Salt and pepper the mullet and poach in simmering water for about 5 minutes. Garnish with fresh parsley and lemon.
