Florida Vegetable Recipe

Eggplant Slices

1 eggplant, seeded and thinly sliced
2 garlic cloves, finely chopped
1/4 cup parsley, finely chopped
  olive oil to taste
  Balsamic vinegar to taste
  salt, optional
  pepper, optional
  hot pepper flakes, optional
  capers, optional
Very thinly slice an eggplant, preferably a thinly shaped eggplant which yields less seeds. Use a dry non-stick pancake grill pan or fry pan to grill the slices on both sides. (Thus the necessity for the slices to be very thin, so the eggplant cooks through.) Prepare a kind of marinade: finely chopped garlic, finely chopped parsley; salt, pepper, hot pepper flakes and capers are optional; olive oil and balsamic vinegar to taste. Layer the eggplant and marinate in a covered dish.
