Tomato-Dill Jam

Ingredients |

2 cups |
tomatoes, peeled and seeded |
2 tablespoons |
shallots, minced |
1 tablespoon |
garlic, minced |
2 tablespoons |
fresh dill |
2 tablespoons |
fresh parsley, chopped |

salt and pepper to taste |

Preparation |
Simmer tomatoes, shallots, and garlic in a sauce pot until juice is reduced and mixture reaches a paste consistency. Remove from heat and stir in the herbs. Season with salt and pepper. |
