Florida Vegetable Recipe

Garlic Green Beans

1 pound green beans, stem ends removed
1 teaspoon salt
1 tablespoon olive oil
2 teaspoons garlic, minced
  salt and pepper to taste
Bring a large pot of water to a boil; add 1 teaspoon of salt. Add green beans, uncovered and cook until tender, yet firm, approximately 6-8 minutes. Remove from pot and pour cold water over beans until cool. This will help beans retain vibrant green color. Heat a large saute pan, add oil and heat over medium-high heat. Add beans and garlic; saute for 2-3 minutes. Season with salt and pepper.
