Florida Vegetable Recipe

Grilled Eggplant and Mozzarella

Ingredients  
1 large eggplant, thinly sliced
  olive oil
  salt and pepper
2 tomatoes, thinly sliced
1 bunch basil, chopped
8 ounces mozzarella cheese, thinly sliced
  balsamic vinegar
 
Preparation

Drizzle olive oil on both sides of eggplant, then sprinkle with salt and pepper. Grill on medium high heat for 1-1/2 minutes on each side. Place eggplant on a baking sheet. Top with tomatoes, basil leaves and mozzarella. Bake at 400 degrees F for 5 minutes. Sprinkle with balsamic vinegar and serve.
