Florida Vegetable Recipe
Red Pepper Bruschetta

Ingredients |

red peppers, roasted and peeled, julienne |
1/2 |
onion, minced |
1 bunch |
parsley, chopped fine |
2 tablespoons |
garlic, minced |

tomatoes, seeded, peeled and diced small |
2 tablespoons |
olive oil |
1 tablespoon |
balsamic vinegar |

salt and pepper to taste |

Preparation |
Combine all ingredients in a medium bowl. Mix well and refrigerate for 30 minutes. Strain and serve on toasted baguette circles.
