Florida Vegetable Recipe

Red Pepper Bruschetta

Ingredients  
3 red peppers, roasted and peeled, julienne
1/2 onion, minced
1 bunch parsley, chopped fine
2 tablespoons garlic, minced
3 tomatoes, seeded, peeled and diced small
2 tablespoons olive oil
1 tablespoon balsamic vinegar
  salt and pepper to taste
 
Preparation

Combine all ingredients in a medium bowl. Mix well and refrigerate for 30 minutes. Strain and serve on toasted baguette circles.
