Florida Vegetable Recipe

Corn Chowder

Vegetable-6063
Ingredients  
8 ears sweet corn
1 onion, minced
10 ounces bacon, minced
8 ounces heavy cream
22 ounces chicken stock
  salt and pepper
 
Preparation

Cut corn off of ears. Sauté the bacon and onion until translucent. Add corn and cream. Cook until cream is reduced by half. Add chicken stock. Cook 15 minutes, then pureé and serve. Add salt and pepper to taste.
