Florida Vegetable Recipe
SunLite Potato Pancakes

Florida SunLite potatoes |
1 cup |
milk |
4 tablespoons |
butter |
2 tablespoons |
chives, chopped |
|
salt to taste |
|
pepper to taste |
|
garlic salt to taste |
|
flour to cover |
|
olive oil to brown |
|
Preparation |
Peel and slice potatoes. Boil potatoes covered with salted water for 20 minutes or until soft. Drain water off potatoes and mash with potato masher while warm. Add milk, butter and chives. Stir well and add salt, pepper and garlic salt to taste. Refrigerate overnight or at least 2 hours. Make a patty out of a small handful of potatoes and pat flour on both sides. Brown potato cakes in olive oil in medium hot skillet. Serve warm.
