Florida Vegetable Recipe
Florida Baked Squash

herb seasoned dry mix stuffing |

sharp Cheddar cheese, shredded |

Preparation
Melt butter and saute onion until soft in medium-sized skillet. Set aside. Rinse and cut tip ends of squash. Place in large sauce pan and cook until just tender. Drain and cut in half lengthwise. Scoop out seeded pulp and add to warm onion mixture. Place squash shells in buttered baking dish. Stir stuffing mix into squash and onion mixture. Stir in eggs and 1/3 cup of the cheese. If mixture is dry, add milk. Stuff the squash halves with mixture and sprinkle the remaining 1/3 cup cheese over squash. Bake at 325 degrees F for 20 minutes or until set and cheese is melted. Do not bake until dry.
