Method: Heat olive oil over medium-high heat in a large sauce pan; saute onions and peppers, for approximately two minutes; add garlic and stir for one minute; add white wine, simmer, and reduce liquid by half, add stock and simmer until peppers become very tender. Remove from heat, add fresh herbs and puree in a food processor or blender. Adjust seasoning with salt and pepper and strain if desired. Serve with fresh Florida seafood, chicken, or Florida vegetables.
Yield: Approximately 2 cups or 6-8 servings
