Bring water, lime juice, sugar and ginger to a boil. Cool and add chicken, marinate 2 to 24 hours. Remove chicken from marinade and coat with jerk seasoning and sauté in butter. Remove chicken from pan and add mango and sherry; cook until mango is heated thoroughly. |
