Papaya and Avocado Salad with Lime Salad 1 papaya, peeled, seeded and cut into ½ inch cubes 1 large avocado peeled, pitted, and cut into 1 inch cubes 1 tomato, cut into ½ inch cubes 1 8-ounce can sliced water chestnuts 1 lime, cut in half Combine papaya, avocado, water chestnuts, and tomato in a large bowl. Sprinkle the salad with the half lime. Cover and refrigerate for one hour. |
Vinaigrette 1 tablespoon Dijon mustard ½ small clove garlic, minced salt and freshly ground pepper to taste 1 tablespoon balsamic vinegar 1/3 cup olive oil Whisk mustard, garlic, and salt and pepper together in a small mixing bowl. Gradually add the olive oil, whisking constantly, until the dressing is creamy. Taste and correct seasoning. Pour dressing over salad ingredients. Serves 8.
